Roasted Green Goddess Salmon

Ingredients
- 1.5 lb filet of Prince William Sound or Copper River Sockeye Salmon
- 1 cup mayonnaise
- 1 cup parsley
- 1/4 cup tarragon
- 2 Tbsp chives
- 2 Tbsp oregano
- 2 Tbsp dill
- 1 shallot
- 1 clove garlic
- 2 Tbsp lemon juice
- 2 tsp Worcestershire sauce
- 2 tsp white vinegar
- 3 anchovies
- 1/4 tsp salt
- freshly cracked pepper
Instructions
- Preheat oven to 300 degrees.
- Combine all ingredients except salmon in a food processor. Pulse until herbs are blended, and the sauce is lightly green.
- Place the salmon filet on a parchment-lined baking sheet. Slather half of the green goddess sauce over the filet, and roast in the oven for 20 minutes, or until the salmon easily flakes.
- Serve with the remaining sauce.
